??? mode: Play Story mode on the Hard difficulty, and quickly tap the random item that flies across the background during the dialogue before each stage begins. Successfully complete the stage to unlock the "???" option for that stage in Free mode.

Hidden mode: Get an "S" rank in Challenge mode to unlock this option at the shop.

Sudden mode: Get an "S" rank on two courses in Challenge mode to unlock this option at the shop.
